We should leverage having everything set up in NixOS VMs to compose them into integeration tests.

Ideally, this would be built into whatever we make for #8, but we don't have to wait for that to make some standalone tests.

I've been working towards a NixOS test for the mastodon/garage behaviour that is broken, so that we can effectively ask those upstreams for help debugging it (and demonstrate for them the power of nix!) That work is in nixos-tests branch
