Mastodon when running in development mode has a mechanism for getting the emails it sends locally at <mastodon-url>/letter_opener. This is useful for testing.

However, if we can get a local mail server up and running, that will more accurately simulate the real world. I'm not sure if it's worth getting letter_opener working in the meantime, or if there are other advantages to having it up and running.
