once we have #7 & #8, we should get garage data replicated accross multiple machines

This is easier said than done. Garage requires a bunch of stateful configuration to set up, which is inimical to NixOS. I have a couple hacks right now that are fragile and not secure and only work because garage is running on a single machine.
